There was no better ramen than on the NCL cruise ships in the mid 90s. After midnight the Asian crew galley would cook up the noodles, add fresh scallions, poached eggs and a hunk of bread. Best $3 you could spend. I miss those days.

I keep a variety pack of instant miso soup for a quick snack at work and for some reason the green onion one is the best. Wonder why.
For real every time we do fancy udon or ramen, there are green onions chopped up to put in at will. I guess they go good with salty?
Sometimes you’ll see negi ramen on the ordering machine at whatever ramen joint you might duck into in Japan and I’ll often order it and 4 out of 5 times it’s absolutely delicious.

I absolutely do: I think the noodles are an interesting choice though. They look like regular spaghetti noodles
